Introduce:

50% to 60% glucomannan, 20% to 30% starch, 5% cellulose, 5% to 10% crude fat, 3-5% soluble sugar (monosaccharide and oligosaccharide), and 3-5% ashy materials (mineral elements) are all present in dry konjac.

According to both domestic and international studies, konjac glucomannan is a polysaccharide that is joined by many β-1-4 glycosidic links with D-glucose and D-mannose at a gramme molecular ratio of 1:1.6. Its molecular weight ranges from one million to two million daltons.

A naturally occurring dietary fiber with a large molecular weight and exceptionally high viscosity, konjac glucomannan may retain up to 200 times its original volume of water and transform it into a viscous liquid. Due to the unique β-1-4 linked structure of D-glucose and D-mannose, Konjac glucomannan does not supply calories and is not impacted by human digestive enzymes.

The food, beverage, health care, pet food, and chemical sectors all make extensive use of konjac glucomannan as a gelling agent, thickening, stabilizer, emulsifier, and film forming.
